2. Rissoles and salad

Rissoles are fried patties made from leftover cooked meat. For 1 pound meat (ground or minced), you add 1 egg, 1/2 cup dry breadcrumbs, usually 1 minced onion, and whatever seasonings seem appropriate. Let it sit until the egg soaks in enough to make the meat shapeable, shape, flour and fry till brown and hot throughout (to cook the egg).

If you don't have leftover gravy, it's often served with ketchup. It does need a sauce of some kind. Anyway, frugal and tasty use of leftovers. We have about a pound of KFC chicken breast in the fridge, so away we go.
