Cauliflower puree soup with crushed fennel seed and tortellini (4 cheese). Chopped parsley over the top.
Tossed green salad with red tip lettuce, Bibb lettuce, cherry tomatoes, sweet orange and gold peppers, red onion, and celery. Creamy French dressing.
Ginger ale.
Dessert: white chocolate dipped pretzels with hot tea (Earl Grey).

(677 posts)Rissoles are fried patties made from leftover cooked meat. For 1 pound meat (ground or minced), you add 1 egg, 1/2 cup dry breadcrumbs, usually 1 minced onion, and whatever seasonings seem appropriate. Let it sit until the egg soaks in enough to make the meat shapeable, shape, flour and fry till brown and hot throughout (to cook the egg).
If you don't have leftover gravy, it's often served with ketchup. It does need a sauce of some kind. Anyway, frugal and tasty use of leftovers. We have about a pound of KFC chicken breast in the fridge, so away we go.

(1,049 posts)Hit the supermarket on the way home from work (on the bus…) and was so knackered after hauling six bags (including cat litter and 5# of WW flour) that all I could manage was to toss a spring salad mix in a big bowl with strawberries, walnuts, and a big slosh of Makoto ginger dressing. Occurred to me later that raspberry-walnut vinaigrette would have been better, but I’m out and starved for fruit and greens so no regrets.
