I like to add smoked sausage (doesn't need to be andouille sausage, and even ham works well) to the beans when I heat them up. My husband, from NOLA, adds a bit of extra water to thin the beans down. Add Crystal hot sauce (or any hot sauce) to taste in your own bowl with the red beans and rice. Enjoy.
