I would run your various option through travelocity and see what kind of fares you get. Also check out Southwest. I don't think they are on travelocity, but all of their tickets are one way, point to point.
Be aware that multi-destination tickets do seem to trigger a higher level of security check.
Have you considered driving the leg from Denver to Newport Beach? Western Colorado and Utah are awesome.
