1. I made Garlic Monkey Bread out of them one year.

My kids, who I turned into Garlic Fiends, ate through the initial batch while eating it with pasta one night.

I used a Monkey Bread recipe and reworked the cinnamon, sugar, and butter to include garlic scapes, olive oil, Italian seasoning, and Romano cheese. It was pretty good.
