3. I was getting behind on my vegetable quota (3 cups/day), so had fried vegetables and rice, a delicious favorite

A little more work than I usually do for breakfast. But it is simple-minded, which helps.

This time the veggies (1.5 cups) were grated carrots, collard greens, some celery, some red bell pepper,

(onions too, but I don't count that as a vegetable for quota purposes -- I have a 3.0 cups/day veggie quota)

After the veggies were done, I stirred in some pre-made rice and some ubiquitous bean gravy and heated.

Ubiquitous bean gravy is simply beans and water (3 cups beans and 9 cups water cooked in an Instapot). I call it "ubiquitous" because I put it on everything - veggies, potatoes, rice, spaghetti (along with regular spaghetti sauce in the latter case). The beans are usually a 15-bean mix, sometimes with some large lima beans mixed in.
