The Caribbean has a varied history, with influences from the various colonizers, immigrants (voluntary and not), and the remaining natives.

For Cuban, Cristianos y Moros (black beans and rice) and ropa vieja. For Jamaican, jerk chicken, rice and peas, roti. I don't know enough about the other islands to comment. If fried plantains are on the menu definitely get those.
