You have to use rock salt and ice.

I’m just old school when it comes to homemade ice cream.

And boy howdy there is a science / alchemy to it.

The recipe has to have the right amount of sugar to help in the freezing process. And then the ratio of ice and rock salt.

Last batch I made had crystals in it. I did some research and discovered that I had cut back on the sugar by half a cup, and it froze faster than it should have.

I’ll be making another batch soon and will use my recipe to a T.

I’ve looked at machines that you mentioned and found them out of my budget. They seemed rather pricey. But if I could afford one I’d definitely give it a go!

Good luck on your shopping spree and keep us posted what you decided to get and the results.
