Of course, you can reduce the garlic... Italian cooks are going to load the recipe up with it, but all is up to the preference of the cook, right?

I don't bake or fry with olive oil, and it should be extra virgin olive oil

Since I don't use cooking oil up that fast, I just use canola oil for everything, and it's fine!

Being healthier is one of the reasons I use Canola, too. And it's just so much cheaper.
