Ripened stuff


Here's some ripened logs I made. I didn't put a piece of straw down the middle but I did serve these to 2 French people and they approved so I felt like I had done OK.

They are done the traditional way, hand ladled into molds then once drained coated in vegetable ash mixed with the mold spores then ripened.
