And NO, they are NOT for pie!
That's what I remember about them, their beautiful rosy sprouts, pushing up out of the soil. The appearance was one of the undeniable heralds of spring and warmer days ahead.
I grew up in Upstate New York in the Hudson Valley and Capital district. My great grandfather, grew vegetables and fruits on 3.5 acres of land for the family and neighbors often shared in the bounty. The rhubarb was planted in patches on a terraced hillside. It is wonderful stuff.
We ate it all from the end of May and through June, at least. Rhubarb pies and stewed rhubarb, were my favorites. There were several rows of red raspberry bushes, on the periphery of the garden. My mother made the most delicious, Rhubarb, Raspberry, and Custard Pie. Now I'm getting hungry.
Thank you for posting the pictures they summoned a wonderful memory from my childhood.

(27,289 posts)I also make a rhubarb/cherry cobbler. My mom used to make a great rhubarb upside down cake. Topped with whipped cream - amazing.
I've never been a fan of rhubarb pie. The crust always seems to get so soggy.
