What's for Dinner, Tues., July 7, 2026

Cannellini and tuna salad, this time with the celery flowers! Serving with baby arugula.

I'm also having a turkey and melted jack pepper sandwich with onion rings.

Unflavored kombucha.

Dessert: S'mores ice cream cookie.

Vanilla pudding, and tangerines later.

I been asleep most of the day. Sleeping in one to two hour shifts 😴. This extra sleep should help me get over this pneumonia. I got to get over this soon. My yard work is getting far behind.

I had Subway for lunch, and didn't feel like a big meal. I had the last of the beans I cooked Friday.

Might have some frozen blueberries later.

The fishmonger did a shoddy job of cleaning/dressing the fish though. A slit maybe two inches and left the guts in. I don't mind doing it, but hey, for $9.99 a pound, I expect a little more.

Vegetable accompaniment: chopped spinach with garlic confit and oil.

Starch: Brown Saffron Rice with Pistachios.

5. Another disjointed day

Son whisked me off to get groceries and I forgot the Cubbies were playing, so I could only catch the end of the game (won!), then I had to clean out the crisper in the fridge to evict veggies overstaying their welcome, so here it is 11:11 pm and I’m just sitting down to eat.

Still working on the Quorn roast—this time, a couple thick slices in a big-arsed sammy (WW bun is twice as big as a hot dog bun, and now that it’s mostly in my belly, it FEELS like it!) with some chili-lime tortilla chips and the biggest apple I’ve seen (a pink). Going to bed with a happy tummy.
