Lemon garlic shrimp pasta. Julienned basil leaves on top.
Kombucha: Blueberry.
Dessert: Low-sugar vanilla ice cream with fresh blueberries that I make into a sauce.

(2,060 posts)Soaked beans overnight and cooked separately from the veggies. Sweated in evoo: chopped onion, red and green, jalapeño peppers, and minced garlic. I added them to the beans and simmered until beans were cooked. I added steamed sweet corn as the final stage. Seasoned with toasted and ground cumin seeds, smoked paprika and small amount of cilantro. Corn muffins from a bakery to accompany. Cheers!🥂

(8,193 posts)I've tried off and on for a few years to get a black bean recipe just right... and have yet to achieve it! I salute you!

(2,388 posts)... but then instead of raspberry-walnut vinaigrette, I found I had a bottle of Makoto ginger dressing (very ginger-y for the uninitiated). Mixed greens, carrots, celery, a few olives, and I cubed up some (vegan) turkey to make it a meal.
Of course, by the time I added that many "one more things," it fills a dinner plate and will take an hour to work my way through it. 🤪
