What's for Dinner, Mon., March 17, 2025

What else? Corned beef, cabbage, and carrots. No potatoes here, though. !

on edit: on my way home, I stopped for a cassava. It is similar to potato but the blood sugar rise from it is even; doesn't spike.

I quit potatoes because someone on DU (a long time ago) posted a blood sugar reading after having potato salad. Yikes! After that I dropped potatoes from the grocery list.

Cassava is actually better than potatoes IMHO. I cube them and saute in olive oil. They brown better than potatoes, too. I love them. First learned about cubed cassava potatoes at some restaurant the RG and I dined in a few years ago.

Off to peel my cassava!

So we went to our fav Mex restaurant for lunch.

Mondays are. BOGO ginormous baked potato with grilled chx &/or steak, onions, peppers & cheese sauce. Omg it's so good!

Irish bacon is lovely stuff. This is the first time I've also served the traditional parsley white sauce.

And of course, Guinness.

Steamed cabbage and sliced carrots, air-fried red potato nuggets, with air-fried crispy tofu tossed in Carolina style bbq sauce. As close as I could get to a traditional Irish dinner. Homemade shortbread cookies made with Miyoko’s butter and whole wheat flour for dessert. Cheers! 🍻

I thawed some lovely crab legs from Greenland LOL and did a small boil for the hub and I with last year's sweet corn, beef kielbasa and some potatoes. Very yummy. I'm sure my daughter is eating amazing pasta as I type. LOL

I settled for a reuben at Arby's. Not bad really - and because I was wearing a St. Patrick's Day shirt she only charged me $4.

and a St. Paddy's day shirt meets my criteria for an Irish celebration!

I am so looking forward to a Reuben tomorrow. It's like the after TG turkey sandwich with cranberry sauce.
