What's for Dinner, Sun., March 16, 2025

Appetizer is parmesan peppercorn cheese spread on crackers, along with some vegetables like red and orange sweet peppers.

Bowl of wild mushroom soup with wild rice, cognac, and thyme.

For dessert, a cherry plum and raspberry milkshake.

I should add something healthier, but I just don't have time for much shopping at the moment. Steak was in the freezer and potatoes in the pantry.

Cooked the beef in the Instant Pot, cooked cabbage, carrots and potatoes in the broth while the meat was resting. Nice and tender!

(My chickwheat post from last night, which I started too late to eat then), which I browned up with cherry-jalapeño BBQ sauce plus a jalapeño sauce for extra bite. It was brown and glossy and I couldn’t find a bun so noshed it down plain. Not even a picture for evidence because I was too hungry for it. Added some sad carrot sticks to pretend it was a proper meal.

at the link you provided and if it wasn't for fear of kneading, I would try it. Good pics, showing exactly how to do it.

I don't do yeast bread, either. I'm afraid of too much work. If I did it with my mixer, I'd be afraid I'd never get the dough hooks clean.

So, you see, I am very lazy.

Having it with cherry jalopeno BBQ sauce sounds ever so good. Too bad about the roll, though.

Break it up in three batches so I don’t kill the motor and just let it go long enough so it first throws fibers against the side and then becomes very glossy. It’s really an easy recipe and the only drawback is that seitan needs to rest in the fridge overnight to firm up and get the right texture.

Her other recipes are even easier, including turkey deli loaf and glazed ham. My son’s a ridiculous omnivore but even he admits this is awesome.

I tried a new vegan mac ‘n cheese recipe that was really tasty. The sauce was made from soaked and ground raw cashews, nutritional yeast, oat milk and a pinch of turmeric for color. I started by sautéing minced onion and shallots in Miyoko’s butter. Then I added the cashew paste, oat milk and yeast. After this came to a boil it simmered for a few minutes. Next I blended the cheese mixture with cooked whole wheat elbow macaroni and some cooked green peas. Boy, it was super delicious, but filling. Also steamed some broccoli and mushrooms as a side. Nutritional yeast, turmeric, onion powder, and salt. Nice to have on hand for quick meals or sauces, and a scoop or two with a slosh of non-dairy milk is usually enough.

And now I’m jonesing for broccoli…
