Tangerine-cucumber salad with cucumber, diced celery, and thinly sliced red onion. Served over torn lettuce greens (red leaf, iceberg) with citrus vinaigrette.
Poached salmon and shrimp. Over it I'll drizzle this olive oil the RG sent me. He says it's only for finishing a dish. It's called Les Terroirs de Marrakech. It's from Morocco and is a first cold pressing.
Cherry kombucha.
Lady Grey hot tea. A few nibbles of a chocolate chip cookie.

(38,559 posts)I always wanted to make it but the RG discouraged me. For whatever reason, he didn't think it would be good. However, it wasn't just good, it was great! I'll be making it myself; my first taste was a food gift from a friend.

(6,521 posts)I model mine after my favorite restaurant bowl. And the toppings are a must for me.
Fried tortilla strips, avocado, and cilantro, fresh lime.
Sometimes cheese and or sour cream but I think the dairy is too much and I love a brothy soup. I had two big bowls and probably have two more for the next couple days which is nice for work days.

(19,824 posts)I fried some onions in butter, thinned the potatoes with half and half, and water, added some seasonings. Topped it with croutons and french fried onions.

(1,196 posts)Press out the water and mash firm tofu in a lg bowl. Steam-fry in evoo and veggie broth: chopped onions, sliced carrots, yellow bell pepper, minced garlic and sliced mushrooms. Add cut asparagus and cook only for a few minutes. Add tofu, Jax Tofu Scramble seasoning and Penzys Fox Point herbs. Plate and melt a slice of Parmelas cashew milk cheddar on top in the microwave. Fresh sliced tomatoes drizzled with balsamic also on the plate. Maybe a few Speculoos cookies for dessert. Cheers! 🥂

(1,196 posts)It helps that my brother-in-law is a produce broker and Wegmans is close by - they also have nice produce, but Aldis is the place where I buy my mushrooms. They always have the best prices for white and cremini mushrooms my wife and I go through 3 lbs a week! You might have noticed I put them in everything. Let me add, I enjoy reading your creative menus. You are an eclectic and creative cook!

(10,849 posts)When I was Mom-sitting back a decade ago, I found them variable: the one in Amherst was great, the one in South Buffalo not so much. I did like Aldi's, though - the nearest one to me is several counties away.

I do like them for breakfast as I eat a lot of breakfast tacos. Quick and easy and satisfying.
Thanks. Tofu is pretty inexpensive and healthy and should make for a great substitute.

(1,196 posts)Jax is my favorite. Check out freshjax.com. I like it in tofu scrambles and tofu egg salad. Use mashed tofu as you would real eggs in the same recipe youd use to make regular egg salad.
