What's for Dinner, Fri., Jan. 17, 2025

A water main broke on a street a block away and it has affected my water supply, of which there is none. Of course, I have dozens of stored water jugs for an emergency but they're not exactly convenient to use and I'm thinking the water will be restored in the next four hours.

Nevertheless, it makes for a good excuse to dine out, so I'm meeting a friend at a bistro-type place in the next town over. I keep their menu here at home, so I've chosen Rhode Island style calamari or my appetizer. It has pickled red peppers and lemon aioli.

Kale and wheatberry salad, which has avocado, quinoa, grapefruit, dried cranberries. Champagne vinaigrette.

That's my plan.

Later, when I get home, I'll have no sugar added hot chocolate, but cutting out the desserts at this point. Holidays are over!

2. Home made cheeseburger macaroni

And a cucumber, scallion, Thai chili slaw.

Infused ground beef with Dijon mustard ketchup and dill pickle juice mixed together. Then added that to the mac n cheese. Topped with scallion tops.

Cuke and onion slice’s mandolin thin. Thai chili and sweet chili sauce as the dressing. Salt and let sit for flavors to come together.

Both are very tasty.

Jello with a teaspoon of cool whip before bedtime.

4. Italian Stir-Fry with Pasta

Steam-fried in evoo and veggie broth: chopped onion, sliced carrots, red bell pepper, sliced cauliflower, and minced garlic. Add cannellini beans, sliced mushrooms and spices (dried oregano, basil, fresh parsley, and hot pepper flakes). Toss with whole wheat penne. Sprinkle with homemade vegan “parmesan” made from ground cashews, nutritional yeast, garlic powder, onion powder and salt. Cheers! 🥂

I had a ribeye, yellow squash sautéed with sweet onions in butter, sliced sweet red and yellow peppers roasted with garlic in EVOO with whole milk over ice and water as beverages.

6. Pasta with a bolognese sauce

Needed a simple dinner for 6 tonight, so made a bolognese sauce and spaghetti. Lots of leftovers, which will be frozen for future use.
