Tomatoes, arugula, burrata salad with homemade vinaigrette.
Stuffed peppers. Green and gold peppers stuffed with Italian ground sausage, celery, onion, and topped with tomato sauce and grated parmesan..
Cherry kombucha.
Dessert: blackberries and Greek yogurt. Cold Earl Grey tea. It's 77 here!

(848 posts)Sautéed in olive oil, red and green peppers, onions, zucchini, carrots, celery and garlic. Add canned fire roasted tomatoes, a couple T of tomato paste and veggie broth. Next comes precooked organic sweet corn, kidney, pinto and black beans. Spices are chili powder, cumin, oregano, cayenne pepper, and paprika. When done, add some chopped fresh cilantro - but not too much. Will serve Cincinnati style, over cooked whole wheat spaghetti - not too much lol

(92,661 posts)I don't know what to call it beyond that point. It's kind of eggplant Parmesan only using green tomato slices and meatballs all in one baked dish with marinara sauce, it's pretty good. A lot of prep though. We decided to put the last few tiny carrots and crookneck squash in the sauce. Tomatoes the other veggies and onion all came from the garden that we "put up" last weekend.
Lots of parm, provolone and moz.
Along with garden salad including avocado and baby spinach.
Sourdough bread slice with butter.

(25,483 posts)Right now I'm having a lemon/lime Lassi. I'm thinking about taking some of my sweet onion, yellow squash cooked in butter out of the freezer to thaw for later.

Retrograde
(10,645 posts)and got some lamb chops at a decent price. Froze a bunch, and had the rest for dinner (marinated in lemon juice, garlic, and rosemary, then sauteed). Accompanied by bok choy and coconut rice. And Halloween candy for dessert
