Major, huge, monstrous, gigantic green salad. Most of the greens are from my garden. The arugula looks so healthy and robust!
I'm adding shrimp, radishes, green pepper, tomatoes, Vidalia, and avocado.
In addition, I have pork ribs marinating in Korean BBQ sauce. It has soy sauce, sesame oil, mirin, miso, pear juice,. and sesame seeds. They are going on the grill shortly.
Mac 'n cheese that I made the other day.
Kombucha is cherry.

(1,760 posts)normally I don't make dinner during the week, but I've been home sick today. Doing better but low energy still. Anyway, I mix whipped cream cheese with canned salmon (minus bones & skin) and dill, spread on a tortilla, topped with chopped vegetables. Tonight it's shredded carrot, and thin slices of cucumber, radish and tomato.

(10,645 posts)with shrimp and zucchini. It's Thai-ish because I only have Italian basil left in the garden. (The eggplants - Thai petch siam - are about the only thing that did well in the garden this year)
I've recently discovered Indian ginger garlic paste, which is a great time-saver.

(4,325 posts)so I made my chili casserole with sharp cheddar cheese and cornbread topping. Dessert was a butter pecan take with cream cheese frosting. More than a third of 10x15" pans of both are already gone. Hubby and grandson kept piling both onto their plates! (LOL) Did turn out pretty good... and really hit the comfort food warm spot.
