What's for Dinner, Sat., Oct. 5, 2024

Ratatouille with Polenta. I will grill the veggies (zucchini, eggplant, red and yellow peppers, red onion, cherry tomatoes).

The polenta is creamy parmesan polenta (recipe from Ina Garten).

So looking forward to this. I love grilled vegetables and polenta, but haven't had them together in ages.

Kombucha: cherry.

Dessert: Vanilla cheesecake. Decaf coffee.

Spring greens, vine ripe tomato, artichoke hearts, cucumber (seeds removed) with cubed Gouda and Italian (olive oil, vinegar, spices) dressing. Italian bread garlic toast, two slices made in the skillet with salted butter and minced garlic.

I'm thinking about baking brownies later. If I don't, I'll make a lime or pineapple Lassi for dessert.

Bosnian beef and lamb sausages with ground meat, which we had on pita bread. It was too windy here for charcoal grilling, so I did them indoors, which was messy but worked.The Bosnians accompany these with ajvar, a sauce with red bell peppers, and kajmak, a cheese but it's like sour cream. (I mixed some sour cream, greek yogurt and goat cheese crumbles as a substitute.) As sides we had roast honeynut squash and a red cabbage salad with an oil and tarragon vinegar vinaigrette. Our son had a hankering for key lime pie, so that will be dessert later.
