The colagen and connective tissue break down during the slow roast resulting in unctuously tender beef. Yum. Thanks for reminding me.

Last time I managed that was the late 60s. Prices kept going up and in the 70s, purchasing power was allowed to fall because Republicans are stupid and think wages are inflationary when they're not.
I just got out of the habit of even thinking about eating beef.
Nice to know people can afford it again.
