What's for Dinner, Mon., Sept. 30, 2024

Two kinds of cauliflower soup. One is a Mollie Katzen recipe for which I am using Muenster cheese. Grilled poblanos.

The other is Creamy Red Lentil and Cauliflower Soup. This one has coconut milk, ginger, leek broth, ginger, cumin.

To go with it, I have toasted pumpkin muffin halves and pita breads with salami and onion.

Kombucha: cherry.

Dessert: chocolate chip cookie and milk.

Started with bone in chicken thighs for the collagen and bone broth.
All kinds of dry peppers and Mexican spices went in with onions, yellow sweet pepper and about 5 cloves of garlic. Currently simmering the chicken in 4 cups water.

Will also get roasted Rotel tomatoes and green chilis and a small can of hot tomato sauce and a carton of chicken broth.
It will be a large pot that I will share with some friends.
Frying my own tortillas and finish with avocado and queso fresco.

Mmmmmmmm!
