I'm making chicken satay with peanut sauce. I just put my chicken in the marinade for grilling later.
I love this dish with grilled green pepper and onion on the side, so that, too. Already cut up and ready to go!
Tossed green salad with Caesar dressing--tomatoes, cucumbers, red onion and celery.
Pomegranate kombucha.
As of now, no dessert. That could change.

Asparagus with butter sauce, saffron rice, and a tomato, yellow bell pepper & mozzarella salad.

(4,332 posts)for the last few days. My lupus and fibro has been acting up, and I'd wake up with "too few spoons" of energy to do it. Today, I dragged myself out of the bed and kept at it until I now have a pot of beef stew simmering on the stove (too late to do the crockpot, which is what I'd initially planned). I look forward to eating it with some good crusty bread. And, just because I feel like it, I'm going to make an Italian herb dipping sauce for the bread. Yep, the broth is great for sopping up the bread... but sometimes, you just want something different! (LOL) I'm just waiting for my Pensys spices to make a REALLY good dipping sauce!

(4,332 posts)neither of which can cook with a darn, and if they try dirty every dish in the house, this was the lesser of two evils! (LOL)
Had them order in last night. Just put the bread in the oven now. Tasted the stew; it's really good. And probably the easiest beef stew I've ever made. Not even a recipe to remember. More of a "dump" dish than anything else. Hardest (and longest) part was cutting the beef up small enough for me and hubby to eat easily, flouring it, and searing it in batches. Once that was done, the rest was a snap!
I'm mostly home alone, but not always.
Invented my own beef stew, when working and raising kids, bought cut up 'beef for stew,' and yes, most 'difficult' part was dredging in flour w garlic powder, salt, and THYME, and then sauteeing.
Added vegs, pots, peas and carrots, onions, canned stewed toms, red wine, and voila!!!

At the time, kids didn't know the difference. Now that they have kids of their own, they sure do!

(1,760 posts)(curried, with mango) over a bed of leaf lettuce. Apple crisp for dessert, to use up apples that haven't stayed crisp for eating out of hand. Food to watch the Iowa Hawkeyes lose by, sigh.
There's a potluck at church tomorrow, so today was a cooking marathon for me: chicken cordon bleu casserole, stuffing with sausage and mushrooms, and prepping the ingredients for a salad to put together just before serving, with romaine lettuce, beets, honeycrisp apples, and goat cheese.
