Stuffed peppers. They have ricotta, spinach, mozzarella, parmesan, onion, and garlic. I made them a few days ago but only had one. Tonight I want at least 2.
In some I put in an Italian meatball, surrounded by the ricotta/spinach stuffing.
I have a fresh head of green ruffly lettuce, so a tossed salad. Cucumber slices, cherry tomatoes, red onion, radishes. Caesar dressing with wonton strips on top.
Half a toasted artisan bread with garlic butter.
Pomegranate kombucha.

(22,882 posts)A mix of sweet and spicy Italian sausages pan-fried with onions, red/green/orange bell peppers, garlic, fresh oregano and black pepper. Served with kaiser rolls. Caesar salad and chianti.

(6,332 posts)And need to use some small sweet peppers up. So I am cooking brown lentils in lotsa spices and will stuff the peppers with that and some mozzarella cheese. Also making some polenta as a side. Another DUer has done that recently and posted here. So thanks for the ideas!
I have one small Roma tomato and will use that with lotsa fresh garlic and the excess lentil broth to make a sauce for the peppers to cook in.
