What's for Dinner, Thurs., July 25, 2024

Salmon, shrimp, and egg salad over tossed greens. Avocado slices and turkey bacon crumbles over the top. Dill is the main herb that I'm using in light mayo dressing. It also will have diced celery and Vidalia onion.

Dessert: chilled cantalope.

Blueberry-pomegranate kombucha.

We have made an agreement to eat healthier.

So, big spinach salads with all kinds of veges. Meatless Mexican Rice, with cooked brown rice, chopped peppers, sour cream (I usually use plain yogurt, but he's squeamish about that,) and Monterey Jack cheese on top. Bake for half hour at 350 degrees, foil on top.

Most of our posters at C & B are into healthy eating so I think you will get good ideas here.

Not only that, it just helps to associate with others who are dining healthfully, too.

Your meal tonight sounds terrific!

Recently I got my annual blood tests back and my doc was very pleased. Not only am I out of the pre-diabetic range, all my other tests are in the normal range, too.

3. Grilled tuna

The tuna steak is fresh from this morning and I've marinated it in a light teriyaki sauce. I plan to grill it black 'n' blue or basically searing the outside. Once it's ready, I'll dust it with sesame seeds.

Although it's not Asian, I'm going to grill some asparagus. White rice on the side.

We've got a bottle of saki in the refrigerator and we'l also have ice water with lemon.

with leftover poached salmon. Had a large lunch, so I want something light and cold.

Or maybe the salmon ceviche I made earlier, and a salad
