What's for Dinner, Tues., July 23. 2024

Rosemary Polenta with Eggplant & Gorgonzola.

I'm using the polenta that comes in a roll and you just slice it off. It is topped with a slice of eggplant, tomato, and gorgonzola. Sprinkle rosemary over the top. I'll do this in the air fryer since it is hot here.

I was so happy to see my arugula bed has re-seeded and I have a nice supply of baby arugula. I'll cut that for the salad and have it with parmesan shavings, toasted walnuts, and tomato.

Kombucha is pomegranate-blueberry.

Baklava and tea for dessert.

5. Chicken Salad

Apparently I have been cursed. Or my crockpot has been when it comes to whole chickens. Or maybe the chickens, themselves, have been cursed.

Last time it was on Warm for 4 hours before I noticed. This time, it was on High and I fell asleep and slept straight through the night. That poor chicken cooked on High for 12 hours. It’s a little dry. 😂

The dark meat, which was down in the juices, is alright. The breasts… not so much. So, I made a big container of chicken salad with dried cherries and rosemary from the garden out of the breasts. Loooots of Hellmanns. It’s not bad!

Diced tomatoes from Mom’s garden on the side.

Last time it was on Warm for 4 hours before I noticed.

You see, the crockpot is actually too simple for a cook of your calibre.

A precision heat blender is probably a little more your style.

Anyway, sounds like you solved the problem creatively.
