What's for Dinner, Wed., July 17, 2024

I made a turkey meatloaf last night in the slow cooker, after the heat subsided a bit. I put in grated carrot and yellow crookneck squash, sliced shallots and garlic from the garden, and egg, and chopped spinach. Fresh thyme over the top. Also tamari, S & P.

Wow, did it ever come out great, and was so easy to clean up. I did everything, including cleanup, in 45".

Consequently, tonight: turkey meatloaf sandwiches! Using artisan bread, which will be toasted with a little butter spread.

Spinach salad with cucumbers, tangerine, and red onion. Homemade balsamic vinaigrette.

Dessert: Cold decaf and tea biscuits with a new cream cheese flavor from Aldi called a "cinnamon bun." Of course I had to test it to see if it was worthy of dessert. It is!

Made a little veggie pizza for lunch but didn’t eat much because it’s so hot out. Ugh. Will finish the leftovers for dinner.

Dessert is kinda scaring me. Got a box of pudding from the discount bin for $1.12: York Peppermint Patty Pudding. It’s either going to be sublime or super gross. It’s been chilling all day so we shall find out!

Finally getting to 'dunch,' bacon/egg/croissant and iced decaf w cream and sugar, so much excitement here (not 'great') so sharing pic of grands, taken day before HIS 10th! birthday TODAY.



Glad saw him yesterday, as they're off to the Ocean City MD today.
