What's for Dinner, Tues., June 18, 2024

Mustard greens with balsamic glazed chickpeas. Feta cheese crumbles.

Baby cucumbers in sour cream with dill and Vidalia.

Cold meatloaf sandwich on rye crisp. Vidalia onion.

Pineapple kombucha.

For dessert, a few slices of icy cold honeydew melon.

Because it's 91, I'll probably just have a few bites of each and put in the refrigerator for another time. I do feel like experimenting with the items from my garden.

Pot Roast!!!


I love eating it , but man I feel like I just washed every pot and utensil in the house! Gravy, mashed potatoes… forgot to put the carrots in the crockpot so they are cooking in yet another pot now. Quality Control says the roast is gooooooood, but waiting until everything is ready to have a plate. And until I cool off. Ugh.

Got veggie stock going while I was in there flinging pots around and had some nice fresh carrot, celery, and parsley peels and scraps to go in it.

Might do up some sautéed mushrooms to go with the roast, too. We’ll see.

For dessert, after the inevitable food coma passes:
Tillamook Brownie Batter Ice Cream! Finally found some at Harris Teeter and can’t wait to try it.

new refrigerator. So we been moving food all day and still need to unload the freezer and refrigerator in our camper.

Looks like I been told to cook cheeseburgers and onion rings for dinner.

4. Foreman grill brings back a memory. Our son

just graduated from college and mom and I took the pickup to help him move. Him and a roommate rented a small apartment off campus. Mom gave him a Foreman grill to use his last year in college. Apparently him and his roommate used it daily and never washed it all that time. It had built up a nasty thick crust. He swore it made everything taste better. Mom threw it out in the trash. LOL

BTW, please tell her I am sorry she lost some of her produce due to the refrigerator disaster. I sure know what that's like.

We wore one out. Bought one with removable heating grids. Not a procedure anymore. Just pop em in dishwasher.
