What's for Dinner, Thurs., April 25, 2024

Tomato bisque, where I got to use leaves from my pot of basil, still in the house. Very creamy soup.

Toasted artisan bread with melted havarti-dill on it. I also have pimento smoked gouda to have on the toasted bread. Parmesan cheese crisps.

Bowl of arugula leaves, no dressing.

Pineapple-blackberry kombucha, home-brewed.

1. Asparagus fresh from the garden

A couple of slices of prosciutto heated in a frying pan so they dry up a bit, a couple of olives, a small bit of soft cheese, and a white wine spritzer. But first I have to teach my yoga class and afterwards walk my dog. Then I can enjoy my light evening meal

Because I cut the asparagus right before I want to use, it I eat it raw. So good 😋

fresh grilled asparagus on the side. It was a farmer's market day . Tomorrow I plant my herb garden I was lucky to find lemon grass which I had not found in the last few years..

I am so excited. AKwannabe told me she started hers by rooting it from some she purchased.

I’m still looking for some that look like they’ll root. I want to try both ways, seeding & rooting.

The seed package says it’s fussy so I am happy I’ve even gotten it to come up.

I did leeks once from seed. Tedious affair but I succeeded! Had to transplant around four times before putting out in the ground. Starting as around 40 “hairs”.

I would buy a stalk to use and then just pop the bottom into a small vessel with water.
Change the water often until you have the roots developed pretty good then transplant to dirt and keep moist.

Right now I have 3 plants. One from a used stalk and two I experimented by using the whole stalk and it worked the same but sorta top heavy in most vessels except a vase.
So my 3 plants are thriving indoors with only north light because I live in an apartment building. On edit: my stalks looked like crap and yellowish vs greenish. After water they turn very green. It loves water!

Next, experiment will be to cut one of my living stalks and see if it rejuvenates!

3. Tuna and sweet potatoes

I tried out a new way of cooking sweet potatoes by cutting them up and putting them into a slow cooker with a can of coconut milk and a pinch of salt. It was pretty tasty. Dinner was mainly this plus some canned tuna. Had to open two cans because the cats insisted on their share.

Baby spinach, black olives, orange bell pepper, red onion, grape tomatoes, mozzarella, one hard-boiled egg. Dressing oil and white balsamic vinegar.
