Cheesy baked broccoli fritters. They have grated cheddar cheese, quinoa, scallions, garlic, eggs, panko, Italian seasonings. I got the recipe from Nagi Maehashi, whose cookbook I checked out from the library.
She has an interesting technique with her cookbook where you can scan in a QR code and go to her website for a video. I didn't do that but I might check it out later.
Might have a chicken sausage with it. They are feta cheese-spinach sausages.
There are various sauce ideas she provides with this recipe and I think I'll choose the Instant Spicy Pink Sauce or possibly the tzatziki.
Kombucha is tangerine-pineapple.

(4,613 posts)Sautéed soft-shell crabs in butter, garlic and herbs. Linguini with marinara sauce. Green salad with tomatoes, red onions, cucumbers and croutons with Italian dressing. Garlic bread. Carrot cake.
You were going to make up for that missed evening meal with something spectacular.

(34,252 posts)46 oz bottle of a V8 type tomato juice, then any veggies you want.
Todays mix is cauliflower, sweet potatoes, carrots, celery, onions, frozen green beans & corn. Simmer till potatoes are soft, then a can of kidney beans, a handful of ditalini pasta. What ever spices you want.

INGREDIENTS -- I doubled this for this much soup
1 Tbsp chili powder ($0.30)
1 tsp smoked paprika ($0.10)
1 tsp cumin ($0.10)
1/4 tsp cayenne pepper ($0.02)
1/2 tsp oregano ($0.05)
1/2 tsp salt ($0.05)
1/2 tsp 15 cranks fresh black pepper ($0.05)
