What's for Dinner, Mon., April 8, 2024

Chicken breast sandwich with thyme and garlic flavored mayo, turkey bacon slice, thinly sliced ham, romaine, avocado, and shredded scallion. Sandwich bread is nine-seed whole wheat. I'll only have half since it's a pretty big sandwich.

Pomegranate kombucha.

Dessert: I had some bran muffin dough that I hadn't baked, so I baked it and will have a muffin with a sliced apple.

Mollie Katzen's muffin recipes are just the best! The next one I want to make is grape nuts muffins.

It turned out really well. I liked it, my wife liked it and my dog liked it. (She gets to lick the bowls, then they can go back in the cupboard) Just teasing...

Two large chicken thighs cut into small pieces, seasoned and sauteed lightly in olive with some onions
Mixed in a partially cooked bag of frozen assorted veggies
Added a can of cream of chicken soup undiluted
Cooked in store bought pie shells covered and vented.
Baked at 350 for about 35 minutes.

I didn't add any salt, but I should have.

in that I used a prepared Tikka Masala sauce with some paneer, and a package of Trader Joe's Madras lentils.
