What's for Dinner, Thursday, March 7, 2024

Refried beans on a flour tortilla. AKwannabee did this last night and it sounded good.

At the greenhouse now but will stop for pinto beans on the way home.

I intend to put chopped raw onions and hot sauce on top, as well as chopped cilantro.

Blueberry kombucha to drink.

Yum! So looking forward to this.

Romaine and leaf lettuce, green beans, boiled new potatoes, boiled egg, olives, pickled beets, cherry tomatoes, sliced tuna steak, Dijon vinaigrette.

Smoked turkey lunch meat, cheddar, romaine and spinach, tomatoes, onions, sprinkle of Italian seasoning, and my failed mayonnaise.

Tried to make homemade mayo yesterday but it didn’t work out (didn’t emulsify, wrong type of oil I think). It’s the consistency of salad dressing and tastes good so I kept it, figured it would be good enough to lube up my tuna. Turns out, it’s tasty on a turkey wrap, too!

For dessert: Last night I made a nectarine-blueberry-blackberry crisp with ground walnuts in the oatmeal crisp topping.

Don’t have any ice cream or whipped cream, so made a meringue with the leftover egg whites from the mayo experiment and then folded in a few single-serve oatmeal cookie flavored coffee creamers because why not? It turned out really well! Sweet and creamy, just what a crisp or cobbler needs. It separated a little in the fridge overnight but that is fine, there’s still plenty sweet fluff to use on the crisp.


(missing the “Quality Control” corner. That trial piece convinced me a creamy topping of some sort was needed)

Living alone has set my inventive side free since I don’t have to inflict the things that don’t come out well on anyone else.


My Grandma was a fearless home chef and I think of her when I cook.

I’m proud of that meringue, it came out so pretty! Much better than I thought it would. Actually gasped out loud when I opened the oven to check on it, lol!

made with the shells and some leftover meat from yesterday's crab, and some huge local artichokes I found at the grocery the other day.
