(24,902 posts)It's well worth the cost--like a fine wine.
1/4 cup brown sugar
2 tea NaCl
. Sea salt, kosher salt, regular salt
it is all salt. Do not use left over ice
melt sidewalk salt
2 tea pepper
1 tea garlic powder
1 tea onion
. Dried or powder
1 tea mustard powder
1 tea cinnamon
1/2 tea celery salt
2 tea red pepper seeds or penzys northwoods seasoning or chipotle
Rub on meat and bake for 2 hours or so @ 150 F. Finish on charcoal grill with
some smoke wood chips in water in Al pan on top of the Charcoal the before it gets
Going
. About 30 minutes. Indirect heat on the meat. Cook on Al foil not
on the grill rack. Add any left over dry rub to meat before cooking. Do not take meat
off grill until you see the smoke action for at least 15 to 20 minutes. Flip meat 1 time.
Let meat rest for 5 to 10 minutes on a warm plate before serving. I like chicken as my meat but pork
tender loin, brisket, turkey, or salmon (soaked cedar plank) are all good.

(506 posts)2 Tbsp sweet paprika. Can be 50% smoked paprika, but Id avoid it for meat youre going to smoke anyway.
1 Tbsp celery salt
2 tsp ground cumin
2 tsp cayenne, or to taste. This depends on the heat of the spice, as well as you. I have used as much as a Tbsp when the jar was weak. If youre not fond of heat, 1 tsp may be enough. But it should be spicy.
To use, rub meat (usually ribs or some form of pork) with crushed fresh garlic. Optional, but this both flavors the meat and helps the rub to stick. (Or you can add a little garlic powder, say 1 tsp, to the dry mix.) This amount of rub will cover a rack of ribs. Let sit for a while before cooking. Serve the cooked meat with a warmed sweet/tangy barbecue sauce on the side.
Also a good steak rub, +/- the garlic.
Also good as a sprinkle on soups. It tastes much saltier than it is. Chicken noodle with a generous sprinkle will really help a cold, at least temporarily. Repeat as needed.
Large batch 4oz paprika (1/2 cup). 2oz celery salt (1/4 cup) 1.35oz each cumin and cayenne (2 Tbsp + 2 tsp). Fits (tightly) in half pint jar.

(72,476 posts)I like these products. Just cover the meat with the product and bake @ 125 or so for 2 to 4 hours
and finish on the grill. The Caribbean Jerk is really good. Really easy.

This is one of the best recipes I have ever found. You can play with it. I like adding
some dark rum to the sauce before you mix in the beans. Btw a GOOD Ham Hock helps.

(2,851 posts)Ty for posting here, most of us, can't afford all the ingredients in your post,
Most of America, has , salt ,pepper, onion powder, garlic powder.
Frugal cooking is not about what you have,
Consider yourself blessed, if you can afford all those ingredients

(72,476 posts)Btw red chili seeds are really cheap and or grow. Grow them until fall and the fruits are
red and hang them upside down to dry. Cut off the roots first. Or buy them @ some farmers
market and dry them @ home.
Penzys is not that expensive for most things. Having the needed spices is the frugal thing to do too.
Btw just use sea salt if the recipe is calling for another type of salt.

But, none of you know, your cost for these flavors.
Yes they read fantastic. But what did you spend to make these flavors? Do you spend every time, you want these flavors?
This thread is frugal cooking.
Not, "what we ate today"
