What's for Dinner, Tues., Feb. 20, 2024

Last edited Tue Feb 20, 2024, 06:46 PM - Edit history (1)

Posting early due to working late.

I made a whole grain salad for tonight, inspired by a cookbook I have by Lorna Sass called Whole Grains Every Day Every Way. One of the other authors I consulted said she was embarrassed to even include a chapter on this topic because it's so easy to make these salads with just what you have in the frig or the pantry.

This one has: Israeli couscous, which as you know is a larger kernal. Added chickpeas, tomatoes, sliced green pepper, scallion, minced red onion, and feta cheese. Because I was a little light on the feta, I added minced ham. I have an olive oil/lemon/apple cider vinegar vinaigrette on hand, so I'll use that. In addition, I chopped up parsley and cilantro for the herbs and toasted some sliced almonds.

Will toast half an artisan roll in the air fryer to go with it.

Ginger kombucha.

A few mandarin oranges to go with dark Chinese tea.

The author was right, though. These salads are easy. Later after work, I may post a few of her combos in another post on this thread.

I discovered I was out of red chili gravy yesterday so I made General Tso chicken last night instead. A fresh pot of red is simmering as we speak. I like to nestle the rellenos into a puddle of chili to serve.

That salad you made sounds wonderful!

emailed iris, but I haven't heard anything back from her. I hope she is okay. Normally whenever she needs a little time off she'll ask someone to cover her breakfast thread. This time she just disappeared.

Not with salt and pepper!

Four salmon filets first lightly coated with olive oil and then this spice mélange rubbed in: garlic powder, lemon pepper, smoked paprika, ginger, cayenne, oregano -- and a little salt and pepper.

Never had a better salmon dish.
