I have quite a few ripe bananas at the moment
What say you, duers?

1 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking sida
1 cup (about 3) over ripe bananas
1/2 cup shortening
2 eggs
1 cup mini chocolate chips (I use regular size one)
Combine all ingredients; mix in chips; bake at 350 for 60 minutes; cover with foil & bake 10 minutes (you may skip this step); Remove from oven and cool for 10 minutes; Remove from pan

(15,359 posts)granny smith's apples too. That worked out great but they are not as pretty.
I just doubled the recipe and substituted three big apples for the bananas that should have went in.
Oops. can't find it but you get the idea. Lots of banana muffin recipes out there.

(31,828 posts)Replace part of the sugar called for with brown sugar and add a good dollop of honey. It makes the bread more moist.

(176,855 posts)This is what I use. You'll have to get "translations" for the ingredients because the recipe has British measurements.

1c sugar
add2 eggs + beat
add 2 or 3 br/bl bananas
1tsp vannila
sift 2 c flour
1 tsp soda
1/4 baking powder
1/4tsp salt
2 tbsp sour milk
bake 350 for 1 hr or til top cracks. gets pretty dark.

Best Banana Bread
Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 cups sugar
1 cup softened butter
2 cups mashed, overripe bananas
4 eggs, beaten
1+ cups coarsely chopped walnuts.
Directions
Preheat oven to 350. Grease and flour 2 loaf pans.
Sift together the first three ingredients. In a separate bowl, mix butter, sugar, eggs, and bananas until well blended, then stir in the walnuts. I like to keep the walnuts on the chunky side and I always add extra--my favorite part of a good nut bread.
Combine the banana walnut mixture with the sifted dry ingredients. Divide evenly between the 2 prepared loaf pans.
Bake about 30-40 minutes or until a knife inserted in the center comes out clean. Cool 5 minutes in the pan, then turn onto a wire rack to continue cooling at least 15 more minutes before cutting.
