Decisions red beans and rice or chicken and gravy or shrimp and grits.

So indecisive at 57
Chicken gravy over mashed potatoes green beans. Was gonna do it in crockpot originally was gonna be waffles and chicken well son loves mashed potatoes.

Or make big pot red beans rice with smoked sausages.

Or big pot grits with shrimp and bacon.

Oh and pie maybe blueberry or pumpkin.

For this wet rainy day son and I headed gym then store. 😃

I’ve had a big batch of “baked” beans in the crockpot cooking overnight, so my question will be cornbread or brown bread? Probably both before the beans are gone.

A cold wet day here, so it’s perfect weather for it.

I’m of the opinion that you can put whatever you want in jambalaya. Even that bag of gator pieces waaaay back in the freezer. Gotta say, though, I’m not a fan of grits. I’ll eat them, but if I have anything else available, say, wallpaper paste, I’ll use that instead. I love ground corn, mind you. Tamales are arguably my favorite Mexican entree. I’m more into rice when cooking Cajun. Additionally, I would proudly partake of any of those dishes you’re considering.

Maybe I never had it prepared properly. The chewy texture was off-putting to me.

Trick is to not boil the grits too long, and use real butter. Lots of cheese and garlic. Sometimes I put green chiles in it. Pass the cornbread

It sounds good. My experiences with grits are limited, only having had the version popular in the southern US. I love polenta, however, which is essentially grits, I think.

It's a bit of a trope, but it really is a cost-effective meal. If you can make it to where it actually tastes great, then it's a win win. I conditionally vote for that.

Get ready for the bitter cold headed your way in a day or so, make stuff that can be eaten later. A couple days ago I made this...


Potatoes and Beans.

5-6 med sized potatoes (I like red potatoes because the don't turn to mush easily)
1 med. onion cut into smallish pieces
1lbs fresh green beans cut into 1 inch pieces
1lbs some kind of sausage cut into 1 inch pieces, I like Andouille. but your smoked sausages will do.
1 large Bay leaf. some black pepper.
2Tblsp olive oil

In a large pot partially cook the potatoes with the Bay leaf, cut into chunks, peels and all, drain and set aside. Rinse out pot, dry and start cooking the onion in olive oil over medium heat, add beans. A few minutes later add the sausage pieces. When all that is good and hot, add the potatoes back in with 1/2 cup water, (maybe a little more, a dash of white wine with the water is a good thing too) cover and simmer until potatoes and beans are tender. Is really good for next day eats and also considered good hangover food by some. I just like it because it fills you up and keeps you warm.

One of the best dishes I’ve ever tasted. Unfortunately, I no longer remember the name of the restaurant, nd I’m not likely to be in Savannah anytime soon. Enjoy your cooking. All the choices sound delicious.

We had our rainy day yesterday, and today is sunny and high of 46, but we won't see north of 40 for about nine days.

Mine was really basic, just long grain rice with onions, garlic, canned black beans, and spices. It was really good as a side dish. Maybe I'll try to start with dry beans and incorporate some meat to make a main dish. I do need to keep the sodium level down.
