The RG just wanted a salad, so I said let's make a super-salad. Spring greens and baby spinach, and the vegetables are carrots, parsnip, and turnip. All the vegetables are first tossed in vinegar, then olive oil is added. Diced marjoram. Put this with the mixed greens. Diced ginger also in the salad.
Also homemade sweet potato and rutabaga chips.
Bought some rustic bread while I was out shopping, along with some oat flax/whole wheat pita breads to go with the salad.
Strawberry rhubarb kombucha.
For dessert: almond flour chocolate chip cookies and decaf coffee.

(2,668 posts)Had two leftover turkey carcasses in freezer and a smoked hambone. Broth.
Meat from carcasses. Bay leaf.
Chorizo sauteed with peppers and onions.
Destemmed collards, shredded.
A little chili oil to top.
A little parmigiano reggiano topping for tomorrow night's difference.
45° here in TPA tonight.
Wife picked up a Balsam tree at Lowes, of all places. Don't see many Balsams here.
Competition between soup and tree right now for scent.
Enjoying a Stone IPA brought back from Carlsbad, Ca this summer.

(15,198 posts)Im feeling pretty uninspired because Ive lost my sense of smellappears to be only a cold because Ive had three negative covid tests. I had some pretty healthy leftovers, though, so I nuked falafel, roasted blue sweet potato, and coconut rice, then drizzled tahini over everything. Had a persimmon for dessert. Wish I could taste any of it.

Its working out that Tues, Wed, and Thur. nights I have to fix a large amount of something, or something thats easy to reheat. Always looking for new ideas. Hubby and I get off work at 5pm but have evening activities, daughter gets home from work at 7pm, and our son doesnt get off work until almost 9pm. We still all try to have dessert together when we get home.
For that I made Nigella Lawsons Guinness Stout cake!

Eggplant Parmigiana with angel hair pasta with marinara sauce and a mixed salad.
Klondike bars and Who Framed Roger Rabbit for dessert!

(19,013 posts)from the leftover pot roast. I cooked some barley to add in, also added some frozen peas, and the stumps from a pack of mushrooms.
I also made a mushroom souffle, which turned out very good. I used Monterey Jack, extra sharp cheddar, Mozzarella, and Bleu Cheese, chopped fresh mushrooms, garlic and onion. The kitchen is cleaned and I won't have to cook for a few days.
I recently made one, too, and it was so light and delicious. Perfect evening meal.

(10,647 posts)Dungeness crab (from Washington, since local crab season is late this year), local lettuce, hard-boiled egg, and Louie sauce. With fresh sourdough bread and a crisp local white. This is the *real* San Francisco treat!
Any leftovers will go into a crab bisque (I'm cooking the crab shell and hard parts for a stock) for lunch tomorrow.
