(1,779 posts)Husband does not like crunchy vegetables, so I walk a tightrope between done enough for him and still retain some liveliness in the veg. Pretty good, could have more or less spice according to taste.

(10,911 posts)black beans, roasted corn kernels, tomatoes, jalapenos, and avocados. My own invention - and all the ingredients are Meso-American. It seemed to be popular - most of it got eaten.
