Appetizer: Crackers with mascarpone, halved cherry tomato, onion, and thinly sliced ham.
Egg roll with pork and cabbage.
Entree is cold (poached) teriyaki salmon and shrimp with toasted black and white sesame seeds.
Sliced miniature cucumbers with onion in sour cream/mascarpone dressing.
Dessert: raspberry fruit bar, frozen.

The green beans go in last and cook on top of the stew.

(22,722 posts)My internet went down for 6 days so I couldn't do anything.
You need an onion, two or three cloves of garlic, Jamaican Jerk spice, can of beef broth, two or three medium sweet potatoes, 1 pound of stew meat OR a couple of cans of Kirkland Cooked Beef. (I do this; cheaper than fresh beef)
Brown up onions, garlic and stew meat then sprinkle with a couple Tbs of Jamaican Jerk Spice and work that into the meat/veg. Add a can of beef broth and a can of diced tomatoes. Peel and cut up two or three medium sweet potatoes and add to the stew. Add enough water to cover the solids and simmer until the potatoes are finished.
When the potatoes are starting to get tender, cut up a pound of green beans and add to the stew; cook until beans are done. The beans really make the stew pop, surprisingly
Serve over rice. The recipe suggests using low fat coconut milk instead of water to make the rice. It's awesome.

Sometimes I make it that way with spinach on top instead of the green beans. When I was out of Jerk spice I made it with curry or cajun spices.

(2,033 posts)I'm not vegetarian but do like to make meatless meals from time to time. I think I have a packet of jerk spices that I got as a sample when I ordered from Penzy's. I definitely have curry.

(24,145 posts)Came out SO tender. Pasta salad with shells, chopped celery and sweet peppers, peas, almonds, mayo, basil, parsley, paprika, pepper. Sliced fresh tomatoes from the garden. Mint choc chip icecream.

May have some herb and garlic goat cheese on crackers as an afternoon snack. I also have some cherry tomatoes that are so sweet and delicious that will be nice as well. Thanks for the idea.
