What's for Dinner, Tues., Sept. 5, 2023

General Tso's chicken, although this isn't real chicken. It's that soy protein stuff. I tasted it already and it's pretty good. The nuggets themselves are good but the sauce is really good. Prol'ly 'cuz of sugar.

Oh well, only having a little of it.

Cucumber in sour cream/mascarpone dressing with red onion. For this, I'm using miniature cucumbers which have recently become available at the Korean greengrocer where I go. Tarragon from my herb garden. Has such a licorice flavor.

Kombucha: tart cherry flavor.

Dessert: watermelon. Earl Grey iced tea.

Tomorrow morning I have been summoned to report to the courthouse for jury duty. Hopeful I won't be chosen. I might have to drive down to Arkansas, my older brother is being flown to Little Rock with health issues.

🙂. It sure feels like a Monday, though, day after the holiday

We’re having teriyaki meatballs, jasmine rice, and snow peas

I don't have any turkey.

I did add a hard-boiled egg, and a few slices of beets (I love beets!)

Dessert: cantaloupe melon

(We went grocery shopping yesterday. We always try to use up the fresh produce first.)

Forgot to say what Dad had: pan-fried kielbasa, baked beans, steamed carrots and zucchini

have some leftover bean mixture from Sunday's dinner, avocados, tomatoes, jalapenos - and there are always tortillas in the freezer.

Tostadas seemed to be popular in the late 1970s, but I rarely see them in Mexican restaurants here. They've become our go-to for a quick lunch or dinner.

with rice. My DIL is Hispanic and her mother makes it when we visit. I've made the sofrito and use chicken thighs with the skin on.

Potatos, carrots, onion and chicken. MMMMMMMMM!
