The Landlady returned from her two week trip to the OBX and I don’t feel like cooking so we’re going to the great (but expensive) Mexican restaurant next door to our apartment.

I know she’s going to have fajitas and I’m going to have their grilled shrimp wrapped in bacon. Yellow rice and grilled vegetables on the side. Frozen margaritas and water to drink.

Bacon-tomato linguini, one of my fallbacks. Still have fresh basil for it from my "sky garden" on the upstairs deck.

Death by chocolate ice cream for dessert.

my grocery store was selling picanha cut steaks - which originated in Brazil, I learned, and is cut from the rump. My husband had one piece that he found tough, but my son and I and husband on his second piece found it tender enough. I served the steak with chimichurri sauce. Potato salad, because it's the guys' favorite, and peach galette for dessert.

I did the steaks in the electric skillet. We have a charcoal grill, but with work schedules and whatnot, it always seems too time-consuming and too much work to fire it up. I suggested that we get a gas grill, but noooo, husband would not hear of it.

To prevent your crust from getting a soggy bottom, toss the peaches with the sugar, cornstarch and lemon juice just before arranging them on the crust.


and if there's still juice left in the bowl, slurp it up!

That last one was my tip.
