Cold poached salmon with sour cream-mascarpone dill sauce.

Later I'm making a sheet pan roast with zucchini and feta cheese with balsamic glaze.

Ginger kombucha.

Dessert: chocolate vanilla ice cream sandwich.

1. Going over to my sisters. She's making salmon Patties

My mom used to make them many years ago. It’s a low budget meal (we were fairly poor). Probably been 40 yrs since I’ve had them (made from canned salmon).

Yes, it used to be a low budget meal, but not so anymore. The price of canned salmon has really gone up.

3. shrimp and basil pesto linguini, with a Caesar salad

I've got to mow down the basil, lol.

4. Cheeseburger, air fried squash sprinkled with parmesan

cheese, and zucchini brownie with mixed fruit for dessert.

6. Grilled hamburgers (yes, real ones!), tossed salad,

potatoes made in toaster oven! Nice easy meal.
