What's for Dinner, Tues., Aug. 22, 2023

First up is a tossed salad with all kinds of garden greens. I planted a packet of assorted, and it has: mini romaine, arugula, red leaf, simpson, lolla rosa, spinach, endive, buttercrunch, among others. Cherry tomatoes, green pepper, scallions, green olives stuffed with blue cheese. Carrots, garlic croutons. Ranch dressing.

For the main course, a naan bread pizza with a base of melted mozzarella, then breaded eggplant slices, and on top of that my fave pepper: shishitos, sauteed in the cast iron skillet.

Kombucha: my kombucha mixed with Superberry.

Dessert: Chocolate-vanilla sandwich bars with decaf iced coffee.

First up was a mixed salad of red leaf lettuce, sliced vidalia onion, cherry tomato halves, slices of white mushrooms, pimento stuffed green olive halves, a few banana pepper slices, mozzarella strips and cucumber rings dusted with dried dill weed and topped with olive oil and Balsamic vinegar.

For the main course, I marinated filet mignons (they were on sale!) and grilled them to just past medium rare. They were accompanied by hash browned potatoes.

Dessert: Vanilla ice cream with raspberries

we were thinking alike in some of our dinner choices.

Also funny is that earlier I got a craving for a steak. Didn't act on it (way too lazy), but yeah, a craving.

I took a couple of slices of my homemade lemon cheesecake out of the freezer for our dessert


Dad had meatloaf & mashed potatoes w/ mushroom/onion brown gravy, and steamed green beans.

It’s sooooo effin hot here.


Dragonfruit sorbet
Topped with blueberries strawberries bananas coconut granola and agave.
It’s going down REAL GOOD!

Feels like index is 108


Melting as fast as the sorbet!

at some takeout place here devoted to that sort of thing. I've bought a few here and there but they are e-x-p-e-n-s-i-v-e. Yours sounds perfect for a hot night. I've had dragonfruit alone (not in a smoothie) and it seems kind of mild in taste, unlike something with a tang to it like raspberry.

So glad you reminded me of this. This is such a perfect answer for super-hot days. I think it would take a bit of organization to pull it off like the ones on the menu, but it would be so worth it.

on edit:

I found this, which I think is interesting (about the base of the bowl):

it seems that the coconut base is made of raw coconut(coconut shavings?), banana, agave, and coconut milk. I would assume it’s blended with ice.

In my experience the key is to freeze the bananas - that is what will enable the proper texture. Also if you want to get fancy there is this stuff called "young coconut" that is bought fresh and even better to use than shavings, but it's a pain to work with.

and Ambrosia Sweet Corn on the cob. Before bedtime a zucchini brownie with jello and cool whip.
