Appetizer: eggplant caviar on toast.
Salad: watermelon and plums with feta cheese and arugula. Vinaigrette dressing.
Later, when I get home from work, yellow zucchini and onion, tossed with honey goat cheese. Flatbread.
Dessert: lemon fruit bar.

(823 posts)Nice plump red-ripe tomatoes with oven- baked bacon and crispy iceburg lettuce on soft white bread with mayo. I was not well today and this was an easy-to-fix summertime dinner. There are fudgecicles in the freezer for later.

(1,760 posts)I stupidly put that on the menu last week - thank goodness it's only the beginning of a heat wave here. I marinated boneless chicken, sweet potato, turnip and red onion in lemon juice and olive oil. My son had gotten some ajika seasoning at Trader Joe's in the Twin Cities last month. It has crushed chili peppers, marigold, fenugreek, coriander and garlic, so that's how the chicken and vegetables are seasoned. I'm also baking a peach galette for the church potluck tomorrow, so the combination smells a little weird, but I think both will be okay.

(36,332 posts)...and so on. I usually season braised beef with Chinese spices for a long simmer in the oven. We'll have it with hot dinner rolls and a green salad.

We had cheese burgers in late afternoon so salad and cottage cheese seems to be enough tonight.
