Roast Chicken Thighs with Sheet Pan Tomato-Onion Compote.

Found this recipe in a new cookbook called Simply Tomato by Martha Holmberg. It's easy, which is important to me tonight because I have to work and will want something fast for when I return. I have all the prep done and just have to put it in the oven. Calls for onion, garlic, thyme, marjoram or rosemary. Olive oil, lots of cherry tomatoes.

If you're looking for ways to use up more of your tomatoes, check your library, which is where I found this book. Has lots of colorful illustrations.

The next recipe I want to try from this book is a salad which combines tomatoes and peaches.

Dessert: iced coffee and a Zaini chocolate.

Some leftovers and deli meats are catching my eye.

Going to start with leftover garden salad

There is lots of fruit, peaches, cantaloupe, blue berries, apples, bananas - I think I'll pick cantaloupe

Leftover chicken enchiladas or a sandwich, corned beef, ham and/or turkey. - I am undecided and may just have pepper jack and crackers.

I was just thinking how fortunate I am to have to make such decisions.

Before we were married my husband made a crack about any woman fit to be his wife would serve Thanksgiving dinner at least 3 times a year. Here's #2 this year, I change it up a little each time.

Deviled eggs, sweet pickles and cherry tomatoes
Smoked turkey legs with spicy cranberry BBQ sauce
Red potatoes and green beans
Cornbread
Sweet potato pie

Homemade pizza, that is, topped with pepperoni, kalamata olives and a red pepper "pesto" that was hanging around the fridge.

I rarely eat out unless I’m traveling and don’t think I’ve had McDonald’s in years. Wasn’t expecting much, but the spicy chicken sandwich wasn’t bad.
