(10,942 posts)Whatchagot stir-fry made with chicken breast, broccoli florets, and carrots. Served over rice, of course. Beverage of choice.
((Whatchagot refers to "whatever's in the fridge/freezer", of course, since I haven't had a chance to go shopping.)

(18,134 posts)TJ is sleeping off last night's shift so it's just me and I've just come in from cleaning up after pruning. I am hot and thirsty.
This sandwich is turkey and Swiss cheese on toasted rye with lettuce, fresh tomato and mayo.
I will have fresh peach slices and yogurt if I have a hankering for more.

(19,114 posts)Cooked together with salt pepper, a bit of liquid smoke, a bit of bacon fat and butter. A piece of kielbasa cooked separately.
My sister-in-law used to make foil packs of the vegetables and cook them on the grill. I had forgotten all about it. I hope I keep it in the lineup. So good!

(92,948 posts)I really got interested in it about five years ago when I had the occasion to be on site with a very skilled chef for an entire summer, foil wrapped all kinds of things was one of his summer specialties. He cooked on the grill most of the time when it came to dinner, there was a screened porch dining room in the shade, it was lovely, the food was elegant.
Now I do a Sunday dinner with my hiking pal and he has a grill and a smoker, we both just got the same model of a nice counter top convection oven so we have many options, we always cook at his house. He likes to cook veggies in foil wrap too so I can still enjoy some of my favorites from the summer of fine food.
The convection oven is great for corn on the cob, takes a few minutes and you can get charred ends if you want them. I eat a lot more of it now. Yesterday I convinced him that firing up the grill just for ContheC and it could be done by the time the grill was ready. It was +98F, he was on his way to go get going on that when the heat and my words hit him simultaneously, he comically came right back in and asked, "how many minutes?" We cooked it in the convection oven and have a cold plate of veggies, cheese and sourdough pieces with it. We just both wanted corn on the cob.

(19,114 posts)It is just me. I roast a lot of veggies in the oven. Today, it was a dry stew
Sounds like you have a lot of good times over your cooking devices

(92,948 posts)Not much of a kitchen, meaning no counter/prep space, and the counter top thing was a major compromise but it has helped inspire me to cook more as I have been in a slump lately. Except for Sundays, it's just me as well. I just get tired of cooking for myself all the time.

(19,114 posts)But bite for bite, cheaper to make a nice meal at home, probably safer :/ I usually try to cook enough to have leftovers for a day or 2.
