Pork schnitzel, which I made early this morning. Just have to heat it up.
Roasted brussels sprouts in balsamic.
Tossed green salad. I'm using half romaine and half greens I collected in the garden just a short time ago: black-seeded Simpson, baby romaine, arugula. Red pepper, radishes, chopped scallion, cherry tomatoes.
Dessert: ice cream with cherries and toasted walnuts. Decaf coffee.

(10,889 posts)Red cabbage and onions with sliced Field Roast "sausage". It's Great and Holy Week so no animal flesh (including fish) for us this week.
Its 86 outside (snowstorm last week). Grilling burgers and Bocas. All the fixings. Chips. Ice tea. Snow/slush forecasted to return by Monday.

(10,653 posts)or Indian stew of lamb cooked with greens, in this case, the leftover lamb from Sunday and the Swiss chard from the garden, which is starting to bolt. We went from winter to summer in the space of a week, and all the plants are out of whack.
Also rice, yogurt, and some chutneys and pickles.

My chard is only an inch tall now.
Always enjoy seeing what you do with leftovers.
