We don't generally celebrate Easter but we plan to have a lunch of brisket, mashed sweet potatoes, asparagus and black eyed peas. I put the peas on later than I wanted so the flavor won't be as good but they will be great this week.
Are you making anything special today?

(10,877 posts)One more week, and next week is deep fasting (Great and Holy Week). Not sure exactly what I'm having as nothing in the house appeals and I've been feeling a bit down with what my mom called the collywobbles.
Possibly baked salmon with small roasted potatoes and carrots. Last meat or fish until next Sunday.

Made this pie again, totally wonderful! Kind of like key lime but with orange and lemon. Used a Keebler shortbread crust.

Stir together:
1 can sweetened condensed milk
4 egg yolks
6 tbsp frozen orange juice concentrate (thawed)
6 tbsp fresh lemon juice
Pinch salt
Orange or lemon rind if you like (I dont)
Pour into shortbread or graham crust, bake 15-17 minutes or until set (it will jiggle). Let cool completely, then refrigerate, overnight if possible. Serve with real whipped cream.

boxed au gratin potatoes (offspring-demanded "tradition" ), asparagus, deviled eggs (of course), butter rolls. usually do strawberry shortcake but reprising an earlier birthday requested pineapple upside cake with whipped cream because we just didn't get enough then!

(24,790 posts)This year I'm cooking a rack of baby back ribs with a home made plum BBQ sauce. Probably potato salad to go with it. It's just the two of us, no other family here this year.

I just got back from Moms house. Dad is not feeling well (bad allergies plus I think a hangover from hanging out with our good friend Jim last night, lol) so we have rescheduled dinner for tomorrow. Weve always been flexible with holidays due to the jobs/careers weve had. Their house is only 20 min away from mine, and its one of my regular days off, so no big deal. I helped Mom gather all the serving dishes and whatnot so well be ready to go tomorrow afternoon.
For dessert we decided on funnel cakes because why not?

We are having leg of lamb that we get from a neighbor farmer!
I made carrot cake muffins for my husband's birthday which is tomorrow - from carrots in his garden that we overwinter!

(6,602 posts)brussels sprouts with clarified butter, hubby's home baked bread. For dessert, I made a "Fluffy Key Lime Pie", plus we bought a cheesecake variety platter for hubby. We don't usually have dessert but it's our "Spring Celebration" dinner, so we're splurging.

Sauteed big shrimp, with garlic and basil. Pasta with mushrooms, green peas, and parmesan. Raspberry and blackberry pie later.

(1,760 posts)Capon is hard to find anymore (and this one was marked down because it hadn't sold well, got it for 99 cents/pound) - I think people may not know what a capon is, and since chicken has such big breasts nowadays, it isn't the big deal it once was.
Sides were mashed potatoes and gravy, and roast asparagus with parmesan and lemon. Dessert will be yellow cake with strawberries and whipped cream. I tried several hacks to improve the cake mix, so we'll have to see how that came out.

(71,021 posts)asparagus and rolls...for dessert lemon bars, butterscotch pie, and some Pistachio pudding bars. I bought some sherry to go with the meal and it is really good too. But we ate mussels. shrimp, other hors d'oeuvres plus fruit salad and we were so full, that the turkey meal is postponed until tomorrow. Turkey is my youngest daughter's favorite meal. She wants it on all holidays.
