Somewhat of a seafood plate: cold shrimp with cocktail sauce and whitefish salad on crackers.
I go into a tizzy over whitefish salad. So excited!
Dessert: toasted waffle (air fryer) with vanilla ice cream and blackberries. Trying a new tea Twining sent a sample of in the mail: lemon ginger.
Cheese quesadillas with minced red onion, thin slices of jalapeños with sour cream and guacamole. Hot sauces to taste.
Chicken tacos in crispy shells with lettuce, tomatoes, more onions and salsa. Yellow rice and black bean salad on the side.
Margaritas.

(10,890 posts)Tortellini Vegetable Soup redux. This time I'm serving it with a drizzle of olive oil and some basil pesto. It was good the first time around, so should be even better the second time. Soup usually is.

(22,767 posts)Pork eggrolls and cream cheese wontons in the toaster oven. Got to 85 today and the AC won't work, so don't want to heat up the house before husband can fix it tomorrow. Oh, and the coffee maker also went out today. The hot plate stopped heating. Hoping it will at least still brew in the morning.

(10,654 posts)Pasta with a tomato sauce containing canned sardines. A quick dinner for when we're feeling lazy.
I first had this when dining in an Italian restaurant with my mother - when I learned that she hated sardines, as she associated them with the great Depression.
