What's for Dinner, Fri., Mar. 3, 2023

I have a lamb shank in the slow cooker. I put rosemary, parsley, garlic, onion, and carrot in to flavor it.

Roasted cherry tomatoes with garlic, basil, and olive oil. I'll have these as an appetizer with mozzarella balls on naan bread.

I might try some yuca fries with dinner; probably won't be that hungry, though.

Ginger lemon kombucha to drink.

Cantalope and cherries for dessert with Earl Grey tea.

Soaked the beans last night. We had ham and pork hocks in the freezer. I'll simmer the hock in some seasoned stock for a couple hours this afternoon before adding the other ingredients.

They’re all-beef and quite plump. I’ll grill them off the stern of our boat. Served on toasted buns with sauerkraut, chopped onions, grated cheddar cheese, ketchup and brown mustard. Baked beans on the side. Chocolate chip cookies for some sweets.

We’re anchored off Fort Pierce, FL and it’s quite windy today. It should calm down at sunset.

Used by newly received gift of Hamilton Beach Hand Blender to finely mince onion, celery & green pepper. I love this little gadget! 😁

Topped with mild banana peppers.

Yummy!

Chips on the side.

Rummaging around in the freezer, I found some turkey and the last of the tomatillos from last year's crop, so I made some chili verde. Which will be tomorrow's dinner as well.
